Chili's Inspired Dinner

As some of you may know; I am currently in a few college classes at Miami University.  One of the classes I am taking is an introductory class to management and supervisory.  For our first project the focus is on insourcing vs. outsourcing, and opportunity cost.  In order to do this, she had us do two major things.  The first was to go out to eat at one of our favorite restaurants, with whoever we wanted.  The second was to try to recreate what we ate at the restaurant at home.  While we do that, we have to keep track of time and cost for each.  Now, while all of this seems relatively unimportant and irrelevant… I have a reason that I’m telling you this.  For my project I decided to eat at Chili’s Restaurant.  I ordered the Cajun Chicken Alfredo.  It was simply fantastic.  So I had to look up the recipe in order to make it at home.  I found one at this website: (http://www.squidoo.com/chiliscajunchickenpastarecipe)

I will put some of the information from it below.

Cajun Chicken Alfredo

 Ingredients:

4 boneless, skinless chicken breast halves

4 tsp. Cajun seasoning

3 cups heavy cream

½ tsp. lemon pepper seasoning.

1 tsp. salt

1 tsp. black pepper

¼ tsp. garlic powder

8 oz. cooked penne pasta (drained)

2 roma tomatoes (diced)

Fresh shredded parmesan

 Directions:

  1. Marinate your Chicken with the Cajun seasoning.  (I am going to buy the pre-stripped skillet style chicken that you can buy in the bag by Tyson.  And probably some Emeril Cajun seasoning or something… Don’t really have the time to cook chicken)
  2. Grill the chicken either on the grill, or in a skillet… use half of the butter for this step (unless you are buying the pre-stripped chicken like I am… then just follow their directions.
  3. When Chicken is about half-way done get a second skillet and mix the cream, second half of the butter, and the remainder of your seasonings on medium heat, stirring occasionally.
  4. When cream begins to bubble, add the pasta and turn off the heat, stir well
  5. When chicken is finished, slice and add it to the pasta as well
  6. Top with diced tomatoes and parmesan
