Luck on New Year’s Eve

Some people and other cultures believe that there are things you can do on New Year’s Eve to create more luck in the New Year.  One of the most popular activities is the consumption of sauerkraut. I am not a huge fan of sauerkraut; but this is a recipe I think I would even like to try. 

 Krauted Chicken Parmesan

2 pounds chicken cutlets
2 eggs, beaten
1 cup bread crumbs
1 14 oz can sauerkraut
1 15 ½ oz Tomato sauce
Oil
¼ teaspoon each oregano, sage, thyme and basil
1 ½ cups mozzarella cheese
¼ cup grated parmesan cheese

  1. Pound chick until thin. Combine herbs and bread crumbs.
  2. Dip chicken into eggs then into breadcrumbs.
  3. Bake in 400-degree oven until done.
  4. Pour sauce on top of chicken then cover with sauerkraut.
  5. Sprinkle with Parmesan cheese and bake until heated in a 350-degree oven.
  6. Top with Mozzarella and bake about 5 more minutes or until cheese is melted.
