Holiday Rum Cake

We will be enjoying this with our Christmas meal…. Which happens to be spaghetti this year (we like to shake things up)  

Ingredients

1 box (8 ounce) yellow cake mix
1 small package instant vanilla pudding mix
1/2 cup water
1/2 cup rum
1/2 cup oil
4 eggs
1 cup sugar
1/4 cup water
1/4 cup rum
1/2 cup (1 stick) oleo (butter or margarine)
1/2 cup raisins

Directions          

  1. Preheat oven to 325 degrees.
  2. Spray a Bundt or tube pan with non-stick cooking spray.
  3. Blend dry cake mix, dry pudding mix, 1/2 cup water, 1/2 cup rum, oil and eggs for 2 minutes.
  4. Bake for an hour.
  5. Prepare hot sauce just before the cake is finished baking.
  6. In heavy frying pan heat sugar, 1/4 cup water, 1/4 cup rum, oleo, and raisins.
  7. While stirring, boil mixture for 2 - 3 minutes.
  8. Remove cake from oven.
  9. While in pan, slowly pour hot sauce over cake and let the cake cool in the pan for 30 minutes before flipping onto cake plate.
