Grandma’s Taco Casserole Recipe

                This is a recipe for one of our family’s favorite dishes.  Our grandmother makes this for us at least once a month, and we devour it.  If you have ever had a walking taco at a fair or anywhere else; there is a pretty good possibility that you will love this casserole.

 Ingredients:

1lb ground beef

1 cup chopped onion (or half a cup depending on your taste)

1 clove garlic minced

1 (8oz.) can of tomato sauce (spicy tomato sauce is what we use)

¼ Cup Water

1 tablespoon chili powder

¼ teaspoon whole oregano crushed

1 (15 ½oz.) can kidney beans undrained (we use spicy kidney beans)

2 Cups of corn chips crushed (we use Fritos)

1 ¾ Cups shredded lettuce

 On the side:

Shredded Cheese

Tomatoes

 Sour Cream

Lettuce

 Directions:

  1. Combine ground beef, onion, and garlic in a large skillet; Cook until meat is browned. Then drain it.
  2. Combine meat mixture, tomato sauce, water and seasonings in a medium size bowl; stir well
  3. Place half of meat mixture in a lightly greased 2-qt casserole dish; Top with half of kidney beans.
  4. Sprinkle w/ half of crushed corn chips
  5. Repeat steps 3 and 4 to create 2 layers.
  6. Cover and bake at 350 degrees for 30 minutes
  7. Uncover and bake for an additional 5 minutes

 To Serve: Layer Shredded Lettuce, Gourmet Cheese, Tomatoes, and Sour Cream on top (we put ours out in bowls to the side so everyone can decide what they would rather have on theirs… we have picky eaters)

 *optional: you can pour hot sauce over it… if you tend to like it spicier.
